Zucchini Ribbon Salad is a refreshing and light side dish. It is full of flavor and crunchiness in every bite. This salad is best to eat in hot summers.
I pulled out my vegetable peeler and shaved the zucchini into long, thin strips to create a pretty zucchini ribbon. Zucchini is the base of this greek-inspired summer side dish. You can turn this dish into an easy main dish by adding protein like tofu, chickpeas or any beans.
What you’ll need to make Zucchini Ribbon Salad
- Zucchini
- Tri color Bell Peppers
- Salt & Pepper
- Power Greens
- Lemon Vinaigrette
- Oregano
- Feta Cheese
- Olive Oil
How to make Zucchini Ribbon Salad with step by step photos & instructions
1. Shave and peel the zucchini into long strips.
2. Chop the bell peppers into thin slices.
3. Combine zucchini strips and bell peppers.
4. Add some greens of your choice.
5. Now add pepper, feta cheese, olive oil, oregano and toss all together. I also added a little Lemon Vinaigrette that I made last night)
6. Serve immediately!

Ingredients
- 1 Zucchini (large)
- 1 Tablespoon White Wine vinegar
- ¼ teaspoon Salt
- ¼ teaspoon Black Pepper powder
- 1 cup thinly sliced Bell Pepper (I used orange, yellow and red bell peppers)
- 1Teaspoon chopped Oregano
- ¼ cup crumbled feta cheese
- 5 Teaspoons Olive oil
Directions
- Step 1
- Shave the Zucchini with a vegetable peeler lengthwise into strips.
- Step 2
- Now add zucchini strips, vinegar, salt and pepper in a bowl.
- Step 3
- Toss to mix all together.
- Step 4
- Let it stand for 10 minutes. Serve!
Notes
- Do not prepare this salad ahead of time, as the zucchini ribbons will start to ooze out water if left for more than 15 minutes.
- You can add any greens of your choice or totally can avoid them as well.
- For extra crunchiness you can add nuts like chopped almond or walnuts.
