Zucchini Fritters is one of the best recipes to use zucchini in summer. These fritters are so delicious and easy to make. These shallow-fried fritters make a great side dish for lunch or dinner. These Zucchini Fritters are loaded with breadcrumbs, eggs, parmesan, paprika, garlic, pepper, onion and green chili. Everything is combined together and then pressed into small patties and shallow-fried in a pan until they are golden brown.

There are so many ways to use the abundance of zucchini growing in your garden in summer. You can make a simple salad like this Zucchini Ribbon Salad for heavy lunch gatherings, or Apple Zucchini Bread for breakfast, or this simple and healthy Quick Zoodles Salad for dinners.

What you’ll need to make Zucchini Fritters

  • Zucchini, grated
  • Eggs
  • Onion
  • Green Chili
  • Breadcrumbs
  • Parmesan Cheese
  • Garlic Powder
  • Paprika
  • Black Pepper
  • Salt
  • Oil

How to make Zucchini Fritters with step by step photos & instructions

1. Add grated zucchini, onion, green chili, garlic powder, pepper, paprika, breadcrumbs, parmesan and salt to a bowl. Combine well.

2. Now add eggs and mix thoroughly.

3. Heat oil in a pan on medium heat. Take a heaping tablespoon of the mixture and form into patties.

4. Add the patties and cook until golden brown, turning over frequently.

5. Serve immediately and enjoy!

Tips

  • Make it Vegan – Leave out parmesan cheese and eggs. Just add more breadcrumbs as needed to form patties.
  • Make it Paleo – Leave out bread crumbs and parmesan cheese. Just eggs are good to bind them together.
  • Make it Keto – Leave out breadcrumbs.

Ingredients
  • 2 cups Zucchini, grated
