Veggie Nachos

Nachos are one of my most favorite Mexican foods. I’d love to serve them every time in a picnic or a get-together for my family and friends. These veggie nachos are my most favorite way to get my veggies in while still enjoying a delicious snack. 

My recipe is a healthy veggie version of nachos fully loaded with many vegetables, beans and cheese. Adding more vegetables like bell peppers, olives and salsa’s like red salsa or salsa verde gives these nachos the real Mexican nachos flavor.

What you’ll need to make Veggie Nachos

  • Tortilla chips (low fat)
  • Tomatoes (finely chopped)
  • Corn (canned – rinsed & drained)
  • Black Beans (canned – rinsed & drained)
  • Onion (finely chopped)
  • Jalapeño (finely chopped)
  • Mixed shredded low fat cheese (mozzarella & cheddar)
  • Avocado dip
  • Sour Cream (optional)
  • Lime juice
  • Cilantro

How to make Veggie Nachos with step by step photos & instructions

1. Preheat the oven to 350 degrees Fahrenheit.

2. Add the tortilla chips to the bottom of a large baking tray and arrange so they overlap slightly.

3. Sprinkle half of the cheese evenly over the tortilla chips.

4. Add the chopped tomatoes, corn, black beans, chopped onion, and the jalapeño pepper evenly over the top of the tortilla chips. (This is when you can add any vegetables of your choice)

5. Add the remainder of the cheese evenly over the veggies.

6. Bake for 15 – 20 minutes until the cheese is melted and gooey.

7. Serve the nachos topped with the Avocado dip, Lime juice, sour cream and coriander leaves.

Ingredients
  • 8 cups Tortilla chips (low fat)
  • 11/2 cups Tomatoes (finely chopped)
  • ½ cup corn (canned - rinsed & drained)
  • 1 cup Black Beans (canned - rinsed & drained)
  • 1 cup Onion (finely chopped)
  • 1 Teaspoons Jalapeño (finely chopped)
  • 2 cups Mixed shredded low fat cheese (mozzarella & cheddar)
  • 1 cup Avocado dip
  • 2 Teaspoon Sour Cream (optional)
  • 2 Teaspoon Lime juice
  • ¼ cup Cilantro
Directions
Step 1
Preheat the oven to 350 degrees Fahrenheit. Take a baking tray and spread a layer of Tortilla chips
Step 2
Now sprinkle half the cheese over the chips.
Step 3
Add the beans, veggies and jalapeño.
Step 4
Sprinkle the remaining cheese over the veggies.
Step 5
Bake for 15 – 20 minutes or until the cheese is fully melted.
Step 6
Serve warm and top with avocado dip, lime juice, sour cream and cilantro!

Notes

  • Make it gluten free using gluten-free tortilla chips.
  • You can add veggies like bell pepper and Oliver for more flavor.
  • Adding salsa of your choice gives the nachos more restaurant style flavor.
