Thai pineapple fried rice is one of my favorite recipes for busy days! It’s super easy to make, healthy, and so delicious. This dish includes juicy pineapple and vegetables, plus a touch of sweetness with raisins and crunch with cashews for a taste sensation in every bite. This is one of the signature dishes of Thailand, often served on a pretty platter or in a carved-out pineapple.
The trick to this fried rice is using leftover rice and cooking with high heat (make sure all ingredients are kept ready ahead). I tried to make it using freshly cooked rice once and ended up making it mushy. But if you do not have leftover rice and you really crave for this dish then you might have an alternative option. You can cook the rice with little less water than required and air dry the rice for an hour.
