Thai Pineapple Fried Rice

Thai pineapple fried rice is one of my favorite recipes for busy days! It’s super easy to make, healthy, and so delicious. This dish includes juicy pineapple and vegetables, plus a touch of sweetness with raisins and crunch with cashews for a taste sensation in every bite. This is one of the signature dishes of Thailand, often served on a pretty platter or in a carved-out pineapple. 

The trick to this fried rice is using leftover rice and cooking with high heat (make sure all ingredients are kept ready ahead). I tried to make it using freshly cooked rice once and ended up making it mushy. But if you do not have leftover rice and you really crave for this dish then you might have an alternative option. You can cook the rice with little less water than required and air dry the rice for an hour.

What you’ll need to make Thai Pineapple Fried Rice

  • Onion
  • Carrots
  • Bell pepper
  • Frozen Peas
  • Ginger & Garlic
  • Canned Pineapple Chunks
  • Cashews
  • Soy Sauce
  • Curry Powder
  • Green Onion
  • Salt
  • Black Pepper
  • Red Pepper Flakes
  • Cilantro

Things to know 

  • It is Vegan, gluten-free, easy to make and delicious.
  • The pineapple provides this fried rice with juicy sweetness.
  • Curry powder and soy sauce add flavor and spiciness.
  • Peas and Carrots give it some nice crunch and color.
  • Green onions and fresh cilantro leaves provide it with even more flavor and freshness.
  • Green peas add some nice protein.
  • Leftover rice does not only make this pineapple fried rice recipe easier but it also does not clump together like freshly cooked rice would.
  • Basmati rice – it’s best with cooked rice from the day before

Thai Pineapple Fried Rice

Ingredients
  • 1 Onion (finely chopped)
  • 1 cup diced Carrots
  • ½ cup sliced bell pepper
  • ½ cup Frozen Peas
  • 1 teaspoon finely chopped ginger & garlic
  • 1 cup canned Pineapple Chunks
  • ½ cup cashews
  • 2 Teaspoons Soya Sauce
  • 2 Teaspoons Curry Powder
  • 1 cup finely chopped Green Onion
  • Salt
  • Black Pepper
  • Red Pepper Flakes
  • Cilantro
Directions
Step 1
In a large pan, heat the oil and sauté the onion for about 3 minutes
Step 2
Then add the chopped ginger & garlic
Step 3
Then add the carrots, peas and the bell pepper. Cook for 3 minutes
Step 4
Then stir in the cooked rice and season with the curry powder and the soy sauce
Step 5
Next, add the pineapple chunks, green onion and the cashews
Step 6
Season with salt, black pepper, and if using red pepper flakes
Step 7
Stir until well combined
Step 8
Serve with fresh cilantro. Enjoy!
