For all the people who love potatoes this recipe would definitely become one of their favorites. These stuffed potato cakes are soooo yummy, filling and satisfying. These stuffed potato cakes are stuffed with veggies, tofu and grated cheese. These potato cakes would make a good addition to  lunch or dinner or any meal.

What you’ll need to make Stuffed Potato Cakes

For Potato Dough:

  • Potatoes
  • All-purpose flour
  • Cornstarch
  • Salt
  • Black Pepper
  • Cayenne Pepper

For Filling:

  • Veggies – Carrot, Onion, Green Bell pepper
  • Green Chili
  • Red chili flakes
  • Tofu
  • Ginger Garlic paste
  • Garlic Powder
  • Cumin Powder
  • Cayenne Pepper
  • Salt
  • Pepper
  • Oil
  • Grated Cheese
  • Cilantro

How to make Stuffed Potato Cakes with step by step photos & instructions

1. For Dough: Peel the potatoes, cut into small cubes and cook in salted water for about 20 minutes.

2. Take a bowl, add in the boiled potatoes cubes. Then add salt, pepper and cayenne pepper to the and mash them with a potato masher.

Note: Do not use a food processor or any kind of blender as the potatoes turn sticky.

3. Keep the mashed potatoes aside and let it cool to room temperature.

4. For the Filling: Finely chop the onions, carrots, bell pepper and green chilies. Grate the tofu.

5. Heat 2 tablespoons of oil in a pan. Add in chopped onions, green chilies and one tablespoon ginger garlic paste. Saute for a couple of minutes.

6. Then add chopped carrot and green bell peppers. Saute for a couple of minutes.

7. Add in the grated tofu, salt, cayenne pepper and red pepper flakes. Saute for a minute. Turn off the heat and keep aside.

8. To make Cakes: Take 3 tablespoons of dough, form into balls, make a bowl kinda shape. Fill in with a tablespoon of filling. Cover the top with one tablespoon potato dough. Seal the borders carefully and flatten a little to make thick patties.

9. Heat 2 tablespoons of oil in a shallow pan. Slowly drop the potato cake and fry them on medium heat until they turn golden brown on both sides.

10. Serve these stuffed potato cakes as a side with salad and top with any kind of sauce of your choice.

Notes

  • Do not use a food processor or any kind of blender as the potatoes turn sticky.
  • Make it gluten-free by using rice flour as a substitute for all-purpose flour.
  • Make it vegan by skipping the grated cheese or by using vegan cheese.
  • You can oven bake, air-fry the potato cakes instead of pan frying if you want to use less oil.

Ingredients
  • For Potato Dough:
    4 Potatoes, medium
  • ½ cup All-purpose flour or Rice flour
  • ⅓ cup Cornstarch

  • Salt & Pepper, as required
  • 3 tbsp Oil
  • Grated Cheese (optional)
Directions
Step 1
For Dough:
