Spinach Gravy with Curried Tofu

This Spinach Gravy is a nutritious dish infused with aromatic spices. This is an easy, vegan and healthy recipe which can be done in under 30 minutes. This recipe is similar to Palak Paneer or Saag Paneer recipes but I substituted Paneer with Tofu to make this recipe Vegan.

I used coconut milk for the gravy which gives this dish more flavor and is nutritious. This dish looks vibrant with the best flavors ever. This would make a perfect meal for any weekday, weeknight or for any get togethers.

What you’ll need to make Spinach Gravy with Curried Tofu

  • Spinach
  • Tomato
  • Onion
  • Jalapeno
  • Coconut Milk
  • Olive Oil
  • Turmeric
  • Paprika
  • Salt
  • Whole spices – Cumin seeds, Star Anise, Cinnamon stick, Cloves

Here’s the recipe for Curried Tofu.

How to make Spinach Gravy with Curried Tofu with step by step photos & instructions

1. Fill a large pot with water and bring to a boil over high heat. Add salt and spinach, leave uncovered for 5 minutes until the spinach is blanched.

2. Add the blanched spinach, chopped jalapeno and salt to a blender jar. Blend into smooth puree.

3. Heat a skillet and add oil. Once oil is hot, add all the whole spices and chopped onion. Saute until onions turn soft.

4. Add chopped tomatoes and salt. Saute until tomatoes turn mushy.

5. Now add the spinach puree and water. Combine well and cook covered for 5 minutes.

6. Add coconut milk and stir until combined well. 

7. Then add salt, turmeric and paprika, combine well, cover and cook for 2 minutes.

8. Turn off the heat. Taste and adjust the flavors as needed.

9. Serve the Spinach Gravy with my homemade Curried Tofu (see the recipe here). Garnish with cilantro and drizzle some coconut milk.

Notes

  • See my Curried Tofu recipe here.
  • I want to make this recipe vegan so I used Tofu and Coconut milk, but for a regular recipe you can use Paneer and Heavy cream/Cashew paste.
  • You can add ginger and garlic to add more flavor to the dish.

Ingredients
  • 4 cups Spinach
  • 2 Tomatoes

Directions
