Roasted Baby Potatoes is a quick and delicious side dish for any meal. This recipe is so easy to make and needs just a handful of ingredients. These roasted baby potatoes are crispy from outside and soft from inside. 

A pro tip for the potatoes to be crispy from outside is to chop them in half. If the potatoes are roasted whole they become harder and never become crispy. These roasted baby potatoes are totally addicting and can be prepared when you have last minute guests coming over or when you are too lazy to prepare tough meals after working hard all day.

What you’ll need to make Roasted Baby Potatoes

  • Baby Potatoes
  • Canola Oil
  • Garlic Powder
  • Red Chili Powder
  • Paprika
  • Black Pepper Powder
  • Salt
  • Ground Coriander
  • Dried Fenugreek Leaves

How to make Roasted Baby Potatoes with step by step photos & instructions

1. Preheat the oven to 400° F. Grease a large baking sheet with oil and set aside.

2. Slice each potato into half and add them to the baking sheet.

3. Add all the dry spice powders – garlic powder, red chili powder, paprika, black pepper powder, salt, ground coriander and dried fenugreek leaves – to the potatoes.

4. Also add ¼ cup oil and toss until the potatoes are coated well.

5. Arrange the coated potatoes in a single layer.

6. Place the baking sheet on the bottom rack of the oven. Bake the potatoes for 30 minutes, turning after 15 minutes, until potatoes are browned and crisped at the edges.

7. Sprinkle chopped chives and serve!

Notes
