Corn Salad makes the perfect summer dish for picnics, BBQs or get-togethers. So easy to make with no cooking involved! It is very addictive and delicious. It goes well with grilled food and balances heavy main dishes. Slightly sweet, tangy, savory and with just the right amount of heat this is going to be a HIT. I love to add it to my grain veggie bowl or would eat it as is.
You can use fresh corn or the frozen corn or canned corn. You need not cook the corn at all. I used Vegan Cotija in this recipe, but you can use feta or the regular cotija cheese.
Quick Corn Salad

Ingredients
- 3 Cups Yellow Corn (frozen)
- 1/2 Cup Mayo
- 1 Jalapeño (diced)
- 1/4 Cup Cilantro (chopped)
- 1/2 Red Onion (finely chopped)
- ⅓ Cup Tomato (finely chopped)
- 2 Spoons Green Onions (finely chopped)
- Juice of 1 lime
- 1 Cup Cotija Cheese
- 2 Teaspoon Chili & Lime Seasoning (optional)
- 1 Avocado diced (optional)
- Salt & Pepper (as required)
Directions
- Step 1
- Toss the corn to a salad bowl along with red onion, tomato, cotija, cilantro, mayonnaise, jalapeño, lime juice, pepper and chili powder.
- Step 2
- Serve it with tacos or as a salad.
Notes
- I used frozen corn, but you can use canned corn or the fresh corn as well.
- You can replace Cotija cheese with my Vegan Cotija cheese.
- You can add other vegetables like Bell peppers and cucumber.
- If you want more smoked flavor to the corn, you can grill the fresh whole corn on the grill with some butter brushed on.
