Pancakes are my favorite breakfast food. But sometimes I don’t have all the ingredients needed for a pancake in my pantry. This is when I tried this easy go-to recipe for making quick breakfast for my husband and kid. These pancakes are so easy to make, the only ingredients you need are bananas and eggs. Also these pancakes are the healthiest pancakes I’ve ever made!
How to make these pancakes more flavorful?
- You can add 2-3 tablespoons Almond Meal or Peanut Flour to give the pancakes a nuttier flavor.
- Add ¼ teaspoon of Baking Powder if you want them to be more fluffy.
- You can also add cocoa powder or protein powder or any other spices for more taste.
- Banana adds sweetness to this recipe, so no need to add any more sugar.
- Add toppings like nuts, chocolate chips or fruits like berries when the pancake is on the skillet for a personalized flavor.
- You can also use frozen bananas if you don’t have fresh bananas, but let the frozen bananas defrost and make the batter in a food processor.
What you’ll need to make Quick Banana Pancakes
- Ripe Bananas
- Eggs
- Butter
- Vanilla Extract
How to make Quick Banana Pancakes with step by step photos & instructions
1. Take 2 ripe bananas and mash them until smooth with a fork. 2. Add 2 eggs to the mashed bananas and mix well. 3. I like to add 2 tablespoons almond flour for a nuttier flavor. 4. Now heat a flat skillet. Spread some butter with a brush. 5. Since the skillet is already hot, now turn down the flame to very low. 6. Pour in 2 tablespoons of batter and let it cook for 1 minute (Now would be the best time to add any fruit toppings or chocolate chips). Flip and let cook for one more minute. 7. Serve the pancakes warm with fresh fruit toppings, honey, maple syrup or toppings of your choice.
Notes
- Use a non-stick pan to make these pancakes and cook them slow in low flame.
- You can use a food processor to blend this batter if you don’t want any banana lumps in your batter.
- Use a thin spatula to flip the pancakes, as they will be easy to slide under the pancakes without breaking them.

Ingredients
- 2 Ripe Bananas - Medium
- 2 Eggs
- Butter
- 1/4 Teaspoon Vanilla Extract
- Optional extra add ins2-3 tablespoons Almond Meal
- 1 Tablespoon Cocoa powder or Protein powder
- 1/4 Teaspoon Baking powder
- 1/4 cup Chocolate chips or Fresh Berries
- Pinch of Cinnamon
Directions
- Step 1
- Peel and mash the bananas in a bowl with a fork.
- Step 2
- Now add in the eggs and mix them well with the mashed bananas.
- Step 3
- Heat a non-stick skillet and add little butter. Turn the heat down to low.
- Step 4
- Drop 2 tablespoons of batter onto the skillet. (Now would be a best time to add any toppings of your choice)
- Step 5
- Cook for 1 minute or until the bottom turns golden brown when you lift a corner. Flip and cook for another minute.
- Step 6
- Serve the pancakes warm with fresh fruit toppings, honey, maple syrup or toppings of your choice.
