Pasta Primavera

Pasta Primavera is a simple pasta dish filled with spring vegetables and topped with feta cheese. A dried italian seasoning nicely coats the whole-wheat noodles and crisp-tender vegetables in this vegetarian pasta dish. 

This recipe is not only delicious but it is quick to make and healthy. I used roasted edamame pods to get the smoky flavor to the dish. This recipe is the healthier version of the classic dish as I didn’t use any heavy cream in this recipe.

What you’ll need to make Pasta Primavera

  • Farfalle Pasta
  • Onion
  • Vegetables of your choice (I used shredded carrot, edamame pods, sliced radish, cherry tomatoes)
  • Crumbled Feta cheese
  • Garlic
  • Fresh Basil
  • Fresh or Dried Oregano
  • Dried Italian seasoning
  • Olive oil
  • Salt
  • Black Pepper
  • Lemon Juice

How to make Pasta Primavera with step by step photos & instructions

1. Cook pasta according to the package instructions until al dente. Drain the pasta and keep aside.

2. Heat olive oil in a large nonstick skillet over medium heat and add the edamame pods. Saute for 3 minutes and keep aside.

3. In a mixing bowl, add onions, chopped garlic, chopped fresh basil and oregano, shredded carrot, sliced radish and roasted edamame.

4. Then add salt, pepper and dried italian seasoning. Toss well.

5. Add the cooked Farfalle pasta and lemon juice. Toss until combined well and check for salt.

6. Finally add in the crumbled feta cheese, combine well. Serve !

Notes

  • You can substitute Feta cheese with parmesan.
  • Make sure the pasta is cooked al dente and not too soft.
  • Add any veggies of your choice like broccoli, zucchini, asparagus, peas, mushrooms etc.
  • If you want a creamy texture for this dish add 2 tablespoons of heavy cream and combine well.

Ingredients
  • 8 ounces Farfalle pasta
  • 2 cups Vegetables (shredded carrot, edamame pods, sliced radish, cherry tomatoes)
  • 2 tbsp Olive Oil
  • 1 small onion, sliced
  • 2 cloves Garlic, chopped
  • 1/4 cup fresh crumbled Feta Cheese
  • 1 tbsp fresh chopped Basil
  • 1 tbsp fresh chopped Oregano
  • 1 tbsp dried Italian seasoning
  • Salt as required
  • Pepper as required
  • 1 tbsp Lemon Juice
Directions
Step 1
For Cooking PastaCook pasta according to package directions until al dente. Drain and keep aside.
Step 2
For RoastingIn a skillet, heat oil and add the edamame pods and saute for about 3 minutes.
Step 3
Take a mixing bowl and add all the veggies, roasted edamame, onions, chopped basil, oregano and chopped garlic. Toss well.
Step 4
Add the dried italian seasoning, salt and pepper. Combine well.
Step 5
Add the cooked Farfalle pasta and lemon juice. Combine well and check for salt.
Step 6
Add feta cheese, toss well until combined. Serve!
