Easy Roasted Asparagus

Roasted Asparagus is a perfect side dish for lunch or dinner. This oven baked asparagus is ready in just 20 minutes. This quick and easy roasted asparagus recipe is done with thick asparagus spears, olive oil, garlic, salt, pepper, lemon juice, lemon zest and shaved parmesan cheese. This is the best way to roast asparagus and tastes so good with just the basic seasoning spices.

Asparagus is a nutrient-packed vegetable. It is a very good source of fiber, folate, vitamins A, C, E and K, as well as chromium, a trace mineral that enhances the ability of insulin to transport glucose from the bloodstream into cells. That’s good news if you’re watching your blood sugar.

This is not the overcooked stringy asparagus, roasting brings out the vegetable’s naturally sweet flavor. If you want to go an extra mile, before cooking asparagus trim the bottom ends of the stalks because it’s very tough and chewy. You can also snap the ends off the stalks or peel the ends or chop them off with a chef’s knife.

What you’ll need to make Easy Roasted Asparagus

  • Asparagus, trimmed
  • Olive Oil
  • Salt
  • Black Pepper 
  • Lemon Juice
  • Grated Lemon Zest
  • Shaved Parmesan Cheese

 

How to make Easy Roasted Asparagus with step by step photos & instructions

1. Preheat the oven to 400 degrees F and line the baking sheet with parchment paper.

2. Wash and trim the edges off the asparagus. I just snapped the edges of the stalks to trim.

 

3. Spread the asparagus on the baking sheet in a single layer.

 

4. Drizzle with olive oil and sprinkle salt & pepper. Toss gently to evenly coat the asparagus. Bake for 10-15 minutes or until just barely tender. 

 

5. Remove from the oven, toss the asparagus with lemon juice and lemon zest.

6. Transfer it to a platter and sprinkle with shaved parmesan cheese.

Easy Roasted Asparagus

Ingredients
  • 1 bunch Asparagus, trimmed
  • 2 Tbsp Olive Oil
  • Salt
  • Ground Pepper
  • 1Tsp Lemon Juice
  • 1 Tsp Grated Lemon Zest
  • 2 Tbsp Shaved Parmesan Cheese
Directions
Step 1
Preheat the oven to 400 degrees F and line the baking sheet with parchment paper.

Step 3
Add olive oil, salt and pepper. Toss to evenly coat the asparagus.
Step 4
Bake until asparagus are barely tender for about 15-20 minutes.
Step 5
Once done, toss the asparagus with lemon juice and lemon zest.
Step 6
Sprinkle with shaved parmesan cheese and serve.
