Cucumber Yogurt salad is one of the easiest salads I’d love to prepare to balance my spicy rice dishes. It is a delicious side dish with a cooling effect.
This recipe can be done in just 15 minutes. It is made with plain yogurt, shredded cucumber, shredded carrot and a mix of seasoning. You can also add chopped tomatoes, chopped onions and chopped mint to make it more flavorful. Adding a teaspoon of pomegranate seeds gives this recipe a versatile taste.
This Cucumber Yogurt Salad tastes best alongside spicy rice dishes like my Spinach Rice, Vegetable Kitchari and Vegetable Dum Biryani.
