What better way can it be to eat raw veggies than a delicious salad. It takes just about 10 minutes to prepare and makes a great salad for lunch. This recipe requires simple ingredients that help to detoxify and heal the body.
I used just radish in this recipe to keep the salad simple yet nutritious. We usually think radish as a minor ingredient in mixed salads that provides a watery crunch and sometimes a spicy snap. In this recipe, radish takes center stage along with arugula, lemon vinaigrette dressing and fresh grated coconut.

- Baby Arugula
- Radish
- Lemon Vinaigrette
- Sweetened Fresh Coconut
- Salt
- Black Pepper
- Chopped Pistachios

Ingredients
- 2 cups Baby Arugula - Tightly packed
- 1 cup Radish - Sliced
- Lemon Vinaigrette Dressing
- Fresh Grated Coconut
- Salt & Pepper
- Chopped Pistachios
Directions
- Step 1
- Place the arugula, sliced radishes in a large bowl and toss well.
- Step 2
- Add about ¼ cup dressing, fresh grated coconut, salt and pepper.
- Step 3
- Adjust salt, pepper and dressing as per your taste. Top with more grated fresh coconut and serve!
Notes
- I used just radish to make the recipe simple and quick as I served this as a side for a heavy meal.
- You can also add fruits like chopped apple, pear or strawberries.
- You can add more veggies like carrots, cucumber, avocado, onion and any sprouts of your choice.
