These Eggplant Pizza Bites are easy and quick to make and are perfectly healthy yet delicious appetizers or a snack for any occasion. In this recipe the roasted eggplant is topped with tomato pizza sauce/ marinara sauce, paprika, onion, mozzarella cheese and Italian seasoning. These Eggplant Pizza Bites are gluten-free, grain-free and low carb. These can be dairy-free and vegan too if you choose vegan cheese over the regular mozzarella cheese.The toppings can be customized to what you like and have on hand like olives, spinach, basil, tomato, meat etc,.
What you’ll need to make Eggplant Pizza Bites
- Eggplant
- Olive oil
- Pizza sauce/ Marinara Sauce
- Mozzarella cheese
- Italian Seasoning
- Salt
- Paprika
- Onion
- Cilantro
How to make Eggplant Pizza Bites with step by step photos & instructions
1. Preheat the oven to 350°F.
2. Cut eggplants into ½ inch thick slices and discard the ends.
3. Place eggplant slices on a baking sheet lined with aluminum foil. Brush olive oil on the slices and sprinkle a little salt. Bake for 5 minutes.
4. Remove the baking sheet from the oven. Spread pizza sauce on top of each eggplant slice, Italian seasoning, onion, mozzarella cheese and cilantro.
5. Bake for 15 minutes or until the cheese is melted.
6. Top with paprika, serve warm and enjoy!
