This Mediterranean Couscous Salad is easy, healthy and nutritional. This is a simple salad loaded with lots of fresh veggies and a Lemon Vinaigrette makes this great for a meal on its own or as a side dish. 

The base ingredient for this recipe is the Couscous. You can adjust the quantity of Couscous as per your choice. Also you can use vegetables like artichokes, cucumber and olives to add more nutrition to this dish. I always make a big batch of this dish and store it in the refrigerator for a couple of days. But for this salad to taste fresh for the next few days, skip adding the Lemon Vinaigrette Dressing as it might turn the salad soggy. Toss the salad with the dressing just before you have it, this helps the salad taste fresh anytime you eat.

What you’ll need to make Mediterranean Couscous Salad

  • Couscous
  • Kale
  • Roma Tomato
  • Red Bell Pepper
  • Avocado
  • Radish
  • Garbanzo Beans
  • Red Onion
  • Lemon Vinaigrette Dressing
  • Feta Cheese
  • Butter
  • Salt
  • Pepper

How to make Mediterranean Couscous Salad with step by step photos & instructions

1. Cook the Couscous al dente according to the package instructions. Let it cool for 5 minutes.

2. Meanwhile prepare and chop the vegetables. Drain and rinse the canned chickpeas.

3. Combine all the vegetables, chickpeas and couscous to a bowl.

4. Add the feta cheese, butter, Lemon Vinaigrette Dressing, Salt and Pepper. 

5. Toss everything well until well combined. Serve as a side or as a meal!

Notes

  • You can adjust the quantity of any ingredient in this recipe as per your choice.
  • Add extra vegetables like cucumber, olives and artichoke for more nutrition and flavor.
  • Do not overcook couscous, it should be cooked al dente.
  • You can substitute couscous with cauliflower rice, which makes the recipe much easy as there is no cooking involved.

Ingredients
  • 1 cup Couscous, cooked
  • 1 cup chopped Kale
  • ½ cup diced Roma Tomato
  • ½ cup diced Avocado
  • ½ cup sliced Radish
  • ½ cup Diced Red Bell Pepper
  • ½ cup Garbanzo Beans, canned - drained & rinsed
  • ¼ cup minced Red Onion
  • 2 tsp chopped Cilantro
  • 1 tsp chopped Oregano
  • 3 tbsp Lemon Vinaigrette Dressing
  • ½ tsp Butter
  • 2 tbsp Feta Cheese
  • Salt, as required
  • ¼ tsp Black Pepper
Directions
Step 1
Cook couscous according to package directions.
Step 2
Chop all the vegetables. Drain and rinse the chickpeas.
Step 3
Add all the ingredients to a mixing bowl, toss everything together gently.
Step 4
Serve as a side or as a meal!
