Apple Zucchini Bread is so delicious, easy to make and a perfect treat for your family gatherings. This recipe is so simple and does not require a mixer or yeast as a leavening agent. This Apple Zucchini is fluffy with a light touch of sweetness.
I used a box grater for grating apples and zucchini for this recipe. But if you are planning to make more than 2 loaves then I would suggest using a food processor to make your work quicker and easier. To avoid the apple turning brown, grate it just before you fold in your batter.
In this recipe I used chopped walnuts but you can use any chopped nuts of your choice like pecans, hazelnut, almonds.
This Apple Zucchini Bread batter can also be used to make muffins or cake. But keep an eye on the baking time as muffins would take about 30 minutes and cake would take around 35 to 40 minutes to bake.

2. In a bowl, combine all-purpose flour, baking soda, salt, nutmeg and cinnamon. Keep aside.
3. In a large mixing bowl, combine eggs, white sugar, brown sugar, oil and vanilla until well blended. Do not over-mix.
4. Gradually stir in flour mixture into the egg mixture until combined well. Do not over-mix. Grate apples and zucchini.
5. Fold in chopped walnuts, grated zucchini and grated apple.
6. Pour the batter into prepared pan. Smoothen the top evenly with a spatula. Sprinkle 2 tablespoons chopped walnuts on the top.
7. Bake for 45 minutes to 1 hour, or until the top turns golden brown and a toothpick inserted in the center of the bread should come out clean from any raw batter.
8. Let it cool in the pan for 10 minutes before removing to the wire rack to cool completely. Serve!
Notes
- Blot out the water from the grated apple and zucchini gently before folding into the batter.
- Do not over-mix the batter or use a mixer. This might turn your loaf harder.
- Watch out the bread a couple of times while baking as the oven temperature varies, bread could bake faster or might take a little longer to bake.
- When using this batter for muffins, make sure you grease the baking sheet or the cup liners.
